The Brown Butter Boys Supper Club was founded by Chef Michael Romo in 2021 as a response to the barriers observed within traditional fine dining. After years in acclaimed Michelin kitchens it became evident that there was an indelible gap between the artistry of cuisine and the accessibility of the experience.
The Brown Butter Boys sought to reconcile that divide by reimagining the tasting menu as a hyperseasonal, community-driven format: nine-course dinners offered at an approachable price point, staged in rotating intimate spaces across Long Beach and beyond.
The concept resonated immediately — the inaugural year sold out in just two months, and dinners have continued to sell out rapidly ever since. Our story has also been featured in LB908 Magazine & Humans of the Kitchen.
Since then, we’ve grown and built a brand that curates bespoke private dining experiences, collaborative events, and chef-driven dinners — all while continuing to host our monthly community supper club.
Our guiding principle remains clear: For the Community, By the Community.
To bridge the gap between fine dining and community. We create tasting menus that honor the discipline of Michelin-level kitchens while remaining approachable, welcoming, and rooted in Long Beach — guided by discipline, yet laced with irreverence, a balance that keeps each evening magnetic and unmistakably ours.
Each dinner is built on four pillars:
The Brown Butter Boys exists not just to serve food, but to create spaces where people from all walks of life gather around the table — to come as guests, and leave as neighbors.
